Audesirk 2004 Signature, Napa Valley
Our flagship 2004 Napa Valley
Signature has a dark garnet color, and is fragrant with
cassis, blackberry, brown sugar, black olive, and plum
nuances. On the palate, impressions of ripe blackberry,
cassis, dark chocolate, and black tea are wrapped in a
velvety texture. The finish reveals suggestions of Bing
cherry, cranberry, and chicory. It is elegant, showing
smooth tannins and a balanced acidity, which will allow it
to mature gracefully for another five or more years.
Drink this wine now with
classic entrées of lamb, beef, venison, boar, and game fowl.
It has youthful fruit that pairs nicely with such meats that
use herbs and spices to accentuate them, such as lamb and
rosemary, steak au poivre, etc. As it matures, more simple
dishes are suitable. Aged cheddars and mild, aged blue
cheeses are recommended.

Audesirk 2006 Chardonnay,
Knight's Valley
In order to make our style, our
2006 Knights Valley Chardonnay was put through the secondary
malolactic fermentation. The results are lush with a big,
rich texture. It is fragrant with toast, green apple, peach,
apricot, and lemon zest fruit impressions. The palate is
dry, intense, and creamy, with nuances of sweet lemon, green
apple, grapefruit, and peach fruit impressions complemented
by toast and vanilla. It has a nice, crisp finish. Delicious
now, it will be enjoyable for another three years.
Our 2006 Knights Valley
Chardonnay is a classic apéritif wine. Serve with light hors
d’oeurvres and canapés. For entrées, it will grace rich
shellfish such as Dungeness crab, lobster, scallops,
mussels, etc. It is crisp enough to complement seafood such
as salmon and halibut. It is also very well suited for
dishes hot and cold featuring chicken, turkey, quail, and
small game hens in recipes with herbs and white or white
wine-based sauces.

Our 2004 Napa Valley Cabernet

impressions of ripe blackberry, cassis, and dark chocolate
flavors are prominent with a velvety texture. The finish
reveals more suggestions of cassis, blueberry, and vanilla.
It is elegant, with very fine tannins and a balanced
acidity, which will allow it to mature gracefully for
another four years.

Audesirk 2004 Syrah, Napa
Valley

Our limited release Audesirk
2004 Syrah Napa Valley showcases the New World style of
syrah, with deep garnet red color, and a nose filled with
dark plum, blackberry, white pepper, cranberry, and tart
cherry nuances. In the mouth, it is medium weight, with
flavors of wild blackberry, cranberry, dark plum, and a hint
of black pepper. It finishes with impressions of dried
herbs, blueberry, and black tea. The wine will easily mature
gracefully over the next two years, and we expect the pepper
and herb impressions to grow over time.
This 2004 Syrah would be
delicious with beef, game, game fowl, and prepared meats
such as Virginia smoked ham, spicy sausages such as
Andouille or Chorizo, and entrées with tomato sauces or red
wine reductions. As it matures it will elegantly accompany
the more simple preparations of beef, game, game fowl, and
pork.
