In order to make our style, our 2006 Knights Valley Chardonnay was put through the secondary malolactic fermentation. The results are lush with a big, rich texture. It is fragrant with toast, green apple, peach, apricot, and lemon zest fruit impressions. The palate is dry, intense, and creamy, with nuances of sweet lemon, green apple, grapefruit, and peach fruit impressions complemented by toast and vanilla. It has a nice, crisp finish. Delicious now, it will be enjoyable for another three years.
Our 2006 Knights Valley Chardonnay is a classic apéritif wine. Serve with light hors d’oeurvres and canapés. For entrées, it will grace rich shellfish such as Dungeness crab, lobster, scallops, mussels, etc. It is crisp enough to complement seafood such as salmon and halibut. It is also very well suited for dishes hot and cold featuring chicken, turkey, quail, and small game hens in recipes with herbs and white or white wine-based sauces.
